Once again, Brad & Butter resumes his normal shenanigans on the website! I know I havn’t been active on here, but to those who have still stayed to check — thank you so much! Your support means everything.

I’m currently based in New York City for the summer working in restaurants to develop some management skills and I am having a blast. Between recipe testing and work, there just seems to be nothing short of excitement here in the city. As much as I love life in the big city, one thing I do find challenging is spicing up my home-cook menu. Given a hectic work schedule, it becomes hard to cook an individualized menu for every meal, and thus food can get a little repetitive to say the least.

Thus, this recipe is an attempt at spicing up (literally) a classic health-forward breakfast. The spicy, tart, and sweet harissa yogurt dressing complements the aromatic, garlic-infused greens — and of course, the fried egg ties it all together (tbh, is a fried egg ever optional?). If you’re going to tackle this recipe, make sure you’re just slightly wilting your kale until it turns a deep, emerald green. They should still be crisp with a slight give. And as always, give the greens some time to char for some extra flavor.

Wilted Kale with Fried Garlic & Spiced Harissa Yogurt

Ingredients (serves 2)

For the Wilted Garlic & Kale
  • 1 cup baby kale (roughly chopped, stems & leaves separated)
  • 3 cloves garlic (thinly sliced)
  • 2 tbsp. sesame oil
  • 1 tbsp. lemon juice
  • salt (to taste)
  • black pepper (to taste)
For the Spiced Harissa Yogurt
  • 1/2 cup greek yogurt
  • 1 tbsp. harissa paste
  • 1 tsp. honey
  • 1 tsp. olive oil
  • toasted black sesame seeds (to garnish)
  • salt (to taste)
  • black pepper (to taste)
To Garnish
  • 2 eggs (optional)
For the Wiled Kale & Garlic
  1. Heat the oils over medium heat in a pan and flash fry the garlic until crisp, approximately 2-3 minutes.
  2. Remove the fried garlic from the pan and season with salt immediately. Fry the eggs in the infused garlic oil, if using.
  3. Set the fried eggs aside and add the chopped kale. Cook until tender, approximately 5-7 minutes. Kale should be slightly wilted and charred.
  4. Remove the wilted greens from the heat. Season with salt, pepper, and lemon juice.
For the Spiced Harissa Yogurt
  1. Combine all ingredients aside from the harissa and mix until smooth and incorporated. Season with salt & pepper to taste.
  2. Spoon the harissa over the yogurt and mix until barely combined.
To Assemble
  1. Place wilted kale on a serving plate and top with the flash fried garlic. Top with the spiced harissa yogurt and serve with a fried egg if desired.
  2. Enjoy!
