A Natural Aesthetic
Apologies for the delayed post! Unfortunately, being caught up in family travels doesn't really leave me much time to bake. On the bright side, this week I get to share my travel experience in Banff, a small town in Alberta, Canada. I've included some of my favorite pictures and places throughout this week's post, but feel free to reach out if you have any questions!
"Aesthetic" is a word that is typically attributed to a set of concepts that are considered pleasing to the eye. Banff is a physical manifestation of natural aestheticism. Not only is the scenery pleasing to the eye, but it also instills a sense of peace and openness. From the vast yet humble lakes and mountains, Banff reminded me that there is always an ecosystem bigger than just me, and I can only seem to enjoy such sights with a calm silence.
The grounded, pristine feeling I got from Banff and its surroundings mirror the emotions I hope to convey through my recipes, photos, and words. And ultimately, it mirrors my everyday thoughts and behaviors. I wake up with the hopes of somehow instilling a sense of warmth in someone else, no matter how (in)significant.
Everyone has heard the idiom "treat others the way you wish to be treated." But the way I see it, kindness is more about treating others the way they want to be treated. It's about time we take the "me, me, me" out of everything, and begin seeing things in the perspective of others, especially when it comes to expressing kindness.
I often get the impression that the conscious decision to express kindness has become an excuse to determine some level of "good" in oneself. It's almost as if the action is premeditated based on a pro-con basis. I'm not saying that I havn't ever been a perpetrator of such behavior. However, I've come to realize the true value of being kind without having an agenda. Kindness is something that comes from the heart, not the brain. It is not something one should feel obligated to because it should be a natural progression. When someone needs help, reach out for the sake of reaching out. You'll quickly realize that the gratification comes from a place of pure warmth and pleasure.
In other words, kindness should be a natural aesthetic.
A Silent Observer
I mentioned previously how I believe it's best to enjoy natural scenery with minimal noise. Unfortunately, that hasn't been possible over the past week. As much as I love my family, they always seem to be making some sort of commotion. Whether it be pointless bickering or admiring Alberta's beauty, it was hard to focus on enjoying nature.
In order to escape my family's constant ruckus, I figured the one way to enjoy my surroundings in my own head was to listen to music while taking it all in. Fortunately, I had the perfect array of songs to go through during the long drives, short hikes, and stunning photoshoots. Just in case you find yourself in a similar situation, check out the playlist at the bottom of the page! I hope it can serve as some sort of comfort during hard times.
This week's bake is a true Canadian celebration. It includes two of favorite ingredients: maple syrup and legally purchased alcohol. This flavour combination is for sure a tried & true combo; the intense sweetness of the maple syrup and the little "oomph" from the whiskey....I don't think I can ask for more. The recipe is quite simple and is a deviation from my regular cheesecake filling recipe, so if you've tried out my Chai Latte Cheesecake, this one should be a breeze! Also, it IS June aka Pride month. I don't think I have to explain myself further, but to all my fellow comrades: cheers. I love you all.

For the Crust
3/4 cup of walnuts, roughly chopped
2 tbsp. of maple syrup
3 tbsp of butter, melted
For the Filling
450g cream cheese
2 tbsp. of white granulated sugar
1/3 cup of maple syrup
2 tbsp. of heavy cream
1/3 cup of Tennessee whiskey
3/4 cup of sour cream
2 tbsp. of all-Purpose flour
- Bourbon whiskey whipped cream
- Crushed Walnuts
Combine the walnuts, melted butter, and maple syrup until it slightly clumps when pressed together.
Using the bottom of a small cake tin or any other flat, round surface, pack the crust into a lightly buttered 6 inch cake tin.
Bake in a preheated 160C/325F degree oven for approximately 6-8 minutes.
Cool until ready to use.
Maple Bourbon Cheesecake Filling
In a large mixing bowl, cream the sugar and cream cheese until light and fluffy.
Place the cream cheese mixture on a double boiler and whisk in the heavy cream, maple syrup, and bourbon. Gently whisk until no lumps remain.
Remove the mixture from the double boiler and gradually whisk in the eggs. Whisk in the sour cream
Take out approximately one cup of the filling and whisk in the flour until no lumps can be seen. Combine this mixture back into the filling and whisk until smooth
Fill the prepared cake tins with the cheesecake filling.
Bake in a preheated 155C/315F degree oven until the middle of the cheesecake slightly wobbles when shaken (approximately an hour) and the edges of the cheesecake are a rich, golden brown.
Turn the oven off, leave the door ajar, and let the cheesecake cool to room temperature in the oven.
Refrigerate for at least 6 hours before serving.
Garnish with whiskey infused whipped cream and crushed walnuts.
