Fall Fiesta

This morning, I stepped outside and was welcomed by a gentle, crisp breeze and a comfortable chill. A quick stroll to the dining hall in these conditions awakened some sense of ease within me. And that’s when it hit me: fall had arrived.

So please excuse me while I, for seemingly no reason, emphasize the last line of the previous paragraph for sanity’s sake.


Let’s be honest, out of all the seasons, fall yields some of the most favorable qualities. There is so much depth and beauty behind the physical and metaphorical landscape of fall.Don’t agree yet? This might just change your mind:

  1. Balanced Temperature | Fall welcomes some of the mildest temperatures, meaning it’s never too hot or too cold during regular hours. How is that not perfect? Life is all about balance.

  2. Sweater Weather | Why does that matter, you ask? Well, mild temperatures mean you get to use almost EVERYTHING from your wardrobe. Tank tops? Check. Sweaters? Check. Shorts? Check. Sweatpants? Check. Depending on the time of day and your vibe, you can switch it up however you want.

  3. Fall Foilage | Fall is pretty. I feel like I don’t have to explain myself much more, but just in case, let me reiterate. Fall is pretty. Gorgeous views make a fantastic excuse to do some short travelling to check out some of fall’s most beautiful sights. Check out this article by Salt & Wind for some great suggestions.

  4. Autumn Produce | Of course, I wouldn’t be this obsessed with fall if it weren’t for the food. I just happen to be a sucker for all fall produce, especially all things pumpkin or butternut squash. Of course, you can’t leave out the apples. Won’t be seeing the doctor anytime soon this fall!

  5. Warm Spices | And of course, today’s theme. CHAI. CHAI. CHAI. While there are tons of other fall spice blends out there, chai is by far my favorite blend for baking and tea purposes. Everything about chai screams comfort, warmth, and together-ness.

The Bake

And on that last note, I’m baking up a warm, spiced dessert this weekend. While this is technically my lifestyle post of the week, I simply couldn’t resist celebrating by baking up something to share my love for fall.

Let’s be honest, there’s really not much out there better than a decadent, chewy, goeey brownie or blondie. Today, I’m tapping into that mindset by baking off these Chai Spiced Chocolate Chip Blondies.

Chai has such a distinct, warm flavor that I am obsessed with. Paired with brown sugar and lots of butter, they make for a phenomenal bake. They also work well to cut through heavier recipes like my Chai Latte Cheesecake from last year’s fall kick-off.

Ingredients (adapted from Jen’s Favorite Cookies)

  • 113g of butter, melted

  • 1 tbsp. of chai spice

  • 3/4 cup of brown sugar

  • 1/4 cup of granulated white sugar

  • 2 eggs

  • 1/2 tsp. of vanilla extract

  • 1 cup of all-purpose flour

  • 1 tsp. of baking powder

  • 1/2 tsp. of salt

  • 1/2 cup of chocolate chips

Chai Spice Blondies

  1. Melt the butter over low heat and add in the chai spice. Remove from heat and let infuse for 10 minutes.

  2. Take a couple whiffs of the chai infused butter and savor the depth of its aroma. Put it down and get back to work.

  3. Transfer the melted butter to a mixing bowl and mix in the sugars until combined.

  4. Mix in the eggs and vanilla extract until fully incorporated.

  5. Sift the flour and baking powder into the batter until just incorporated. Do not overmix.

  6. Fold in the butterscotch chips.

  7. Transfer the batter to a parchment lined and greased 11cm by 15cm sheet pan.

  8. Spread the batter evenly with a spatula.

  9. Bake in a preheated 175C/350F oven for approximately 20-25 minutes.

  10. Let cool and cut into squares.
