No-Churn Popcorn Five Spice Ice Cream Sandwiches

Summer may be long gone but that doesn’t mean ice cream is out of the question! Definitely add this no-churn ice cream sandwich recipe featuring Chinese five spice into your repertoire because you seriously don’t want to miss out. This ice cream recipe not only has the perfect balance of flavors, but it’s also just so easy. With a couple pantry staples, some elbow grease, and a little patience, you’ll have this no-churn ice cream recipe together in no time.

So you may be asking yourself what’s in Chinese five-spice in the first place and why on earth would Bradley be so daring as to feature it in dessert. Classic five spice contains a medley of spices including star anise, cinnamon, fennel seeds, szechuan peppercorns, and cloves. While some five spice recipes add other aromatics, these five spices form the basis of the spice mix — hence the name. The spice medley is super fragrant, meaning it’s typically associated with flavoring classic, hearty, Chinese savory dishes. Yet, I found that the earthy aroma pairs beautifully with dairy, similar to how nutmeg works in mac & cheese. It’s basically magic. Something like fairy dust.

Also, popcorn & graham crackers with ice cream. Duh.

No-Churn Popcorn Five Spice Ice Cream Sandwiches

Ingredients (makes 6-8 sandwiches)

For the Five Spice Ice Cream
  • 12 oz sweetened condensed milk
  • 475ml heavy cream
  • 1 tbsp. powdered sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. chinese five spice
To assemble and garnish
  • 1 cup sweetened popcorn (I used Lesser Evil)
  • 4 graham crackers (halved into squares)
  • crushed graham crackers
  • sweetened popcorn
For the Fice Spice Ice Cream
  1. Combine the sweetened condensed milk and chinese five spice in a bowl. Set aside.
  2. In a separate bowl, whip the heavy cream along with the vanilla extract and powdered sugar until medium-stiff peaks. Fold the whipped cream into the condensed milk mixture until fully incorporated.
  3. Transfer half the mixture to a parchment lined loaf tin. Sprinkle sweetened popcorn and graham crackers throughout. Top with the remaining ice cream base and more popcorn and crushed graham crackers. Freeze for at least 4-5 hours
To Assemble
  1. Remove the ice cream from the freezer and run a hot knife around the edges to loosen. Remove the ice cream from the tin by lifitng the parchment.
  2. Cut into 8 equal 6cm by 5cm blocks. Press the largest sides of each ice cream block onto a hot surface for one second and sandwich between two graham cracker squares to allow the ice cream to adhere to the graham crackers. Repeat with the remaining ice cream and return to the freezer for at least one hour.
  3. Press a knife dipped in hote water to the sides of the ice cream sandwich and dip into crushed graham crackers or popcorn. Return to the freezer for at least 10 minutes.
