I generally don’t have a problem getting along with most people and I truly try to focus on the strengths of people I get to know. However, I must say that doing so in the past has been especially challenging. Maybe it’s my worsening cold or the absurd amount of hours I forced myself to work, but I found myself struggling to maintain a positive relationship with certain people around me. I’ve decided to vent a little on Brad & Butter because I’m sure we all face similar issues.

It’s really hard to try pleasing and liking everyone — something I’ve come to realize in college. Frankly, I also don’t have the time nor the energy to do so. Especially when such people obviously don’t respect your time or their own time and get into the habit of lying their way out of risky situations. Unfortunately, the past week has been a lot of me bottling up my frustrations because I can’t bring myself to tell somebody else how much I dislike them as a result of their actions & behavior. A little something I need to work on, but for now I think I just need some me time away from all this drama.

Cue these cookies. You can never go wrong with cookies. Especially these fall-inspired (and i ooop-) pumpkin spice chocolate chunk cookies. Because as they say…pumpkin spice and everything nice. These thicc cookies are inspired by the one and only levain bakery in New York City, famous for making some of the most delicious bakes on the east coast. They’re also famous for the concerning size of their cookies that are perfected with a crispy exterior and soft, dough-y center. And of course, puddles of melted chocolate. This cookie recipe is probably my favorite on the blog because it’s got just the right amount of cake-like to dough-like to crisp-like texture. Also, it’s pumpkin spice season and I’m a basic gorl you know me. Give it a try and let me know your thoughts in the comments below.

Pumpkin Spice Chocolate Chunk Cookies

Ingredients (makes 6 cookies)

  • 2 sticks unsalted butter
  • 2/3 cup light brown sugar
  • 1/2 cup granulated white sugar
  • 1 egg
  • 1 egg yolk
  • 1 cup pumpkin puree
  • 1 tsp. vanilla extract
  • 2 + 1/2 cups all-purpose flour
  • 2 tsp. cornstarch
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. pumpkin spice
  • 100g bittersweet chocolate chunks (roughly chopped)
Pumpkin Spice Chocolate Chunk Cookies
  1. In a large mixing bowl, cream the butter and sugars unti pale, light, and fully.
  2. In a separate bowl, beat the egg, egg yolk, and pumpkin puree until fully combined. Gradually incorporate the liquid mixture into the creamer butter & sugar mixture.
  3. Sift in the flour, cornstarch, baking powder, baking soda, salt, and pumpkin spice. Fold until the dough comes together. Do not overmix. Fold in the roughly chopped chocolate chunks.
  4. Portion the dough into six large rounds of approximately 6 oz each. Wrap each portioned dough in cling film and chill in the fridge for 60-90 minutes.
  5. Preheat the oven to 375F/190C. Place three pieces of the chilled dough onto a parchment lined baking sheet. Bake for approximately 17-19 minutes or until the cookies are golden brown. Transfer to a wire rack to cool slightly. Repeat with reamining dough.
  6. Enjoy!
